An integral part of a balanced lifestyle is preparation. Choose one day each week and set aside a couple of hours for your 'meal prep day'. Here is one of my favourite easy recipes thats perfect for a grab 'n go meal.
And yes, I've eaten this almost every day for the last few years... Any of my coworkers can confirm!
Veggie & Cheese Frittata
2 cups egg whites
1/4 cup shredded cheese
¼ cup unsweetened almond milk (or regular milk)
1 cup broccoli, cut up
1 cup raw mushrooms, slices
1 cup peppers, diced
Any other vegetables of choice - onion, zucchini, etc.
Olive oil spray
Seasoning, Salt, Pepper
9x9” square glass baking dish
Preheat oven to 365 degrees. Spray inside on a 9x9” baking pan with olive oil or other non-stick spray. Cut up broccoli, mushrooms and peppers and place in bottom on pan. In a large mixing bowl, add eggs, egg whites, almond milk and seasoning. Whisk with a fork until blended. After mixture is combined, pour over the vegetables in the pan evenly. Sprinkle cheese on top. Place pan in oven and cook for 35-45 minutes, depending on oven. Once cooked, remove from oven and allow to cool. Cut into 4 even servings. Can be eaten right away or can be refrigerated for up to 5 days.
Top each frittata serving with ¼ of an avocado and roughly ¼ cup salsa. Enjoy!
